Salad | Lebanese with a twist

Today I had a friend over for lunch and I was very eager to try a recipe from Comptoir Libanais.

The salad is easy to make it’s only that the ‘leaf parsley’ is an ingredient hard to find in a regular shop here. As it’s the main ingredient of the salad you can’t really replace it with anything else. The original recipe is without feta cheese. I think it’s a great addition as it wouldn’t be filling enough to provide as lunch and it would be better as a side dish. I served the salad with warm brown french bread from the oven.

Ingredients (lunch for two adults)

  • 1 bunch of fresh leaf parsley chopped
  • 1 lemon cut in half
  • 4 ripe tomatoes chopped
  • 50 grams dried bulgur (cereal food)
  • 2 chopped spring onions
  • 70 grams feta
  • extra virgin olive oil
  • sea salt for seasoning

 

Instructions

Soak the bulgur in luke warm water for 1 hour

Chop the parsley, tomatoes and spring onions

Sprinkle the juice from half a lemon into a bowl together with some olive oil and sea salt

Add the parsley, tomatoes, spring onions & feta and mix

Mix in the bulgur and add some more lemon juice, sea salt and olive oil if you like
