Lunch | Carrot Soup


Brightly colored, nutrient rich! This lovely soup has become one of my latest favorites! It’s not hard to make and you can prepare it one day in advance. The toughest part is peeling and slicing 1 kg of fresh carrots. It’s useful meditation time though!


Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 4 adults
Difficulty: easy









  • juice of 1 orange
  • 1 kg of peeled and sliced carrots
  • 1 finely chopped onion
  • 2 cm of fresh sliced ginger
  • 600 ml stock (vegetable)
  • extra virgin olive oil
  • salt and pepper



Fry the onion for 5 minutes, add the ginger and carrots. Stir for another few minutes. Add the stock and coconut milk and leave to simmer for about 15 minutes. Add the orange juice. Season with some pepper and salt.
