Cake | Mixed Spices with Amaretto

Cake with beverage, butter cream filling and chocolate glaze… Being a relaxing Sunday I thought it was time for some serious cake baking! What’s cooking? A mixed spice cake with an Amaretto flavoredĀ  butter creme and chocolate glaze. This cake will serve about ten people. The key is in whisking your mixture for the correct amount of time to create a very fluffy, creamy texture.

Ingredients

Cake

  • 90 grams sifted flour
  • 30 grams sifted cornstarch
  • 6 eggs
  • 150 grams white caster sugar
  • 1 tablespoon sifted mixed spice
  • 100 grams dark chocolate
  • 4 tablespoons semi skimmed milk
  • 20 ml Amaretto

Butter creme filling

  • 100 grams butter
  • 200 grams powdered sugar
  • 100 ml semi skimmed milk
  • splash of vanilla extract
  • 20 ml Amaretto

Chocolate glazing

  • 100 grams dark chocolate
  • 100 grams butter
  • 100 grams powdered sugar

Instructions

Here we go! Take a circular cake tin (24cm) and grease it. Preheat the oven to 160 degrees Celsius. Sift the flour and cornstarch.

Whisk the eggs and caster sugar together au bain-marie in ten minutes (make sure to set a timer). Gently fold in the flour, cornstarch and mixed spice. Pour the mixture in your cake tin and place at the bottom of the oven, leave to bake for about 40 minutes. Check if the top doesn’t brown too quickly. If it does, turn down the heat (only after about 15 minutes or your cake will collapse!). Then let your cake cool down in the oven with the door open for another 15 minutes.

Now slice the cake in half and leave to cool down even further. In the meantime you can get started on the butter creme. Mix all the mentioned butter creme ingredients for about 3 minutes until it becomes quite a stiff white mixture. Add to the bottom half of the cake and spread evenly. Glue the top of the cake on and sprinkle some Amaretto onto the top layer.

Heat the ingredients for the chocolate glaze au bain-marie. Sift the mixture into a bowl and then pour the glaze on the cake. Don’t be too precise and let it drip off the sides! Enjoy šŸ˜€
