Pasta with String Beans & Tomatoes

So here I am proud of my big box filled up with fresh veggies. Where to start?! Pasta is what we enjoy eating the most. So, it’s not a surprise that the first recipe will include a bit of wheat! This dish is easy and quick to prepare.

Ingredients from the box:

  • String Beans
  • Tomatoes

Other ingredients:

  • stock
  • 250 grams pasta
  • extra virgin olive oil with mushrooms
  • 2 tablespoons of extra virgin olive oil
  • sea salt
  • 500 grams mashed tomatoes
  • 10 basil leafs
  • 1 clove of peeled garlic
  • tablespoon of dried oregano
  • 2 sugar cubes
  • black pepper to season


Wash the string beans, slice of both ends of the beans. Now chop them finely and cook them in the water with stock and a bit of extra virgin olive oil (with mushrooms). Cook them for about 10-15 minutes, they have to remain slightly crunchy. Then set aside.

Now create the basis for your tomato sauce. Wash the tomatoes and chop them. Put them in a pan together with the mashed tomatoes, 1 whole clove of garlic, 2 sugar cubes, 10 basil leafs, 2 tablespoons of extra virgin olive oil, tablespoon of dried oregano and a bit of black pepper. Cook for about 15 minutes and then add the chopped string beans. Cook together for about 10 minutes. Remove the garlic clove.

In the meantime you can start boiling the water for the pasta. Add some sea salt to the boiling water and let it dissolve before adding the pasta of your choice. Cook for the indicated time. Serve the pasta with the tomato sauce. Buon appetito!
