Recipe Challenge | Day 6 | Ratatouille


Ratatouille on the side

Today I’m left with little bits and pieces of vegetables. The first thing that came to my mind: ratatouille. ‘Ratatouille? What is that?’, my dearest Italian husband said. It’s French, of course I forgot 😉 It’s a typical spring vegetable dish which they like to serve in the Provence.

Ingredients from the box

  • 1/2 huge courgette
  • 1 aubergine sliced (1cm thick)
  • 1 tomato chopped


  • 1/2 cup red wine
  • 2 tablespoons dried oregano
  • Extra virgin olive oil
  • 1 onion finely chopped
  • Salt
  • Pepper


Treat the aubergine slices as described here: Recipe Challenge | Day 2  Mix the ingredients and sauté all together for about 15 minutes.

Serve with risotto.
