Rhubarb in season. This must be the easiest and shortest recipe for a delicious fruit (well, it’s actually a vegetable) dessert! I was taught this recipe by my mother and she in her turn by her mother. There are many, many ways to process rhubarb. This is a very basic method.

- 6 tablespoons sugar
- 8 branches fresh rhubarb
Chop the rhubarb finely
Take a pan and fill with 1/4 water
Add the rhubarb and put on a lid
When it starts to boil turn down the heat, leave the lid on just covering half of the pan
Add the sugar – the amount you add depends on your taste. The trick is not to add too much in one go but to gradually add more
When the mixture has become homogeneous, the rhubarb is ready
