Greens | Rice, Melon and Avocado


Whole grain rice with fresh melon and creamy, mild avocado. The Galia melon is named after the daughter of a melon breeder. It means ‘God’s wave’ in Hebrew. The melon was first developed in Israel.

You can determine the ripeness of the melon by the distinct smell and also by the color.

Ingredients (Serves 2 adults)

  • 1 squeezed orange
  • 2 red onions chopped finely
  • 2 cups of whole grain rice
  • 125 grams of bacon
  • 2 cm of fresh ginger
  • Sesame seeds
  • 1 handful fresh chopped basil
  • 1 avocado peeled, sliced and then chopped
  • 1/2 Galia melon peeled, sliced and then chopped
  • Pepper for seasoning


Bake the bacon for 5 minutes without any added oil or butter. Add the finely chopped onions and after 5 minutes squeeze in the ginger with a garlic press. Stir for about 3 minutes. Turn off the heating.

Take a large salad bowl and mix the melon with avocado, pepper and sesame seeds. Add the freshly squeezed  orange juice, handful of basil and another bit of pepper.

When the bacon, onion and ginger mix have cooled down, you can add it to the salad bowl.

Boil the water for the rice and cook accordingly. Leave the lid on for another 5 minutes, then let the rice cool down.

Now you are ready to mix the rice with all of the other ingredients. Enjoy!
