Spring | Asparagus Pastry

A Savory Pastry! It’s asparagus time! My favorite seasonal vegetable. There are so many different ways to prepare these gorgeous green veggies. This time I’ve chosen for a pastry dish to enhance the delicate flavor.

Ingredients (serves 3-4 adults)

  • 500 grams green asparagus
  • 4 eggs
  • 200 grams bacon strips
  • 200 grams crème fraîche
  • 8 sheets of puff pastry
  • 100 grams grated young cheese
  • Pepper and salt

I used a circular oven dish with a diameter of 28 cm.

Defrost the puff pastry and preheat the oven to 180 degrees Celsius.
Rinse the asparagus and chop the bottom off (1,5 cm).
Add the asparagus to some boiling, salted water and leave to boil for about 8-10 minutes.
Cover the oven dish with the puff pastry sheets. Make small indentations in the pastry with a fork. Then place the dish in the middle of the oven for 5 minutes.

Meanwhile, bake the bacon until crisp. Manually beat the 4 eggs with the crème fraîche and after a while add the cheese, salt and pepper.
Layer the oven dish with the bacon and then add the asparagus. Pour in the egg mixture and place the dish in the oven for 30 minutes.
