Zuppa di Zucchine…one of my favourite soups served when I’m with family in Italy. It’s hard to find the right type of zucchini in The Netherlands so I make sure to eat this soup at least one time during a visit in Italy.

I’ve learned so much about the zucchini (and aubergines). Before I was introduced to the Mediterranean culture I wasn’t used to eating zucchini and aubergines that much. Now I can’t imagine my life without these great vegetables. Besides all the diverse recipes you can make with these beauties, the zucchini serve as a good source of Vitamin C. Continue reading

Summer | Spinach Soup with Chickpeas

najoboSpanish spinach soup with chickpeas! Potaje de garbanzos y espinacas. This recipe was inspired by Claudia Roden’s book: The food of Spain. It’s a beautiful book full of inspirational regional Spanish recipes. I’ve been cooking this soup for a while now and it has become one of my favourite soups to make for guests.

Lets get started: Peel the potato and slice into thin pieces. Fill a large soup pan with 750 ml water and one cube of stock. Add the chickpeas and sliced potato. Boil the mix on a moderate fire.

In the mean time chop the garlic in halves and break the bread into little pieces. Heat some olive oil in a frying pan and add the garlic and bread. Fry slowly until the garlic turns slightly (!) brown.

Add the spinach to the chick peas and potato mixture. Cover and leave to simmer, stir every now and then. Now boil two eggs for 8 minutes, peel them and remove the egg yoke.

Winter | Pumpkinsoup

I’m talking pumpkins! It’s pumpkin time! This soup is so easy and rewarding. The hardest and longest part is slicing the pumpkin – maybe I also need to change my knife 😉 The first time I started using pumpkin in my dishes was one year ago.

I don’t know how I’ve lived without for so long!

This soup can easily be made one day in advance if you are expecting some guest. Store in the fridge and the taste is even better the next day.
