So, how come I’ve never made an attempt at making a classic tiramisu’?
I’ve been married to my Italian husband for years now, yet no sign of tiramisu’…. Every time I briefly touch the subject my husband replies: ‘Every Italian girl claims they make the best tiramisu’ and it’s nonsense’. Well, good thing I’m not Italian. Just for an experiment I’d like to give it a go! Guess what, he loved mine!
This dessert needs quite a lot of time in the fridge so if you’re making it for dinner guests it’s better to prepare it one day before. A little note on the side: this dessert is extremely rich in calories. It’s not something you should put on the weekly menu 😉
- 500 grams Mascarpone cheese
- 75 grams sugar
- 300 ml espresso/dark black coffee
- cocoa powder
- 5 egg yolks *please be aware raw eggs are used in this recipe
- 125 ml cream
- 300 grams lady fingers (light, crisp and sweet sponge cake cookies)
- 16 tablespoons Marsala wine
Bowl 1: Mix the egg yolks with 50 grams of sugar. Stir in the Mascarpone and mix gently.
Bowl 2: Mix the cream with 25 grams sugar until it becomes stiff.
Now fold the contents of bowl 2 in to the contents of bowl 1.
Mix the Marsala wine with the coffee in a wide dish so you can dip in the ladyfingers. Now cover the bottom of a standard oven dish with the lady fingers.
Take half of the Mascarpone mix and spread it on the first layer of Marsala soaked lady fingers. Sprinkle the cocoa on top. Repeat this procedure to create a second layer.
Now cover the oven dish with cling film and leave in the fridge for a couple of hours. Enjoy!
